2008 MONTICELLO Jefferson Cabernet Sauvignon

The lots used in this wine were all picked, crushed, fermented and aged separately for the first year. After 12 months in barrels, we began to assemble the cuvee in broad strokes. At each racking cycle (every 3-4 months) we would further blend the wine towards the finished cuvee. The final and finishing touches were blended prior to bottling after 26 months in barrel. I enjoy this method of slow-blending over the course of a year or so, when we are assembling blends from many different components, as it allows each blending cycle some time to marry prior to the next.

All of our library wines are extremely limited in availability, in some cases just 2-3 cases of these wines remain. We have taken great care that these they have been cellared in here at our winery in the best of conditions. But because of age we must ask that these wines are sold as-is and purchases are limited to 3 bottles.

The Jefferson Cuvee Cabernet Sauvignon blend is always an enjoyable wine to assemble each year. We generally have a relatively high proportion (up to 25%) of varietals other than Cabernet Sauvignon used in the blend so we can explore some additional layers of interest in terms of varietal aromas and textural complexity. Historically, Merlot has been a primary blending component for this wine, as we have really enjoyed the pairing of the soft tannin-higher acid Merlot with the higher tannin-lower acid Cabernet lots. Cabernet Franc has long played a supporting role in the Jefferson Cuvee. With careful farming and patience nearing harvest, we feel that the grape has earned its place as a master blender in our cellar.
